Let’s Swap Recipes!

I have a great spring recipe that you might want to try. But in return I am asking that you put on your thinking caps and submit a recipe to the new Kitchen Kettle Recipe Contest. All the details are on a previous blog post and you can simply add your recipe using a Kitchen Kettle product as a “comment” to this e-mail. That way, everyone reading the blog can try your recipe too!

Kristine Grego, our food specialist, created this delicious sandwich with spring in mind.

 

Kitchen Kettle Reuben Panini

 

Serves 4

 Dressing:

2 Tablespoons Kitchen Kettle Honey Mustard+

3 Tablespoons finely chopped Kitchen Kettle Kickin’ Pickles, well drained

Mix the above together and set aside.

 

1 Quart Kitchen Kettle Pepper Cabbage, well drained

1 Teaspoon Caraway Seeds

4 Crusty Rolls (Portuguese or Ciabatta)

8 oz. Swiss cheese slices

1 lb. sliced Corned Beef

 

Mix Pepper Cabbage and caraway seeds together.  Set aside. Slice rolls in half.  Spread dressing over insides of both halves.  Place a slice of cheese on each half.  On the bottom half place the Corned Beef and top with 3/4 cup of drained Pepper Cabbage.  Place top on roll. 

 

Place sandwich in a Panini press* and grill, following manufacturer’s instructions, until hot throughout and cheese is melted.

 

+You can substitute the Kitchen Kettle Horseradish Mustard for the Honey Mustard if you desire a little zip to your sandwich.

 

*If you don’t have a Panini press, a heavy skillet will work also.  Heat prior to placing sandwiches in the skillet.  To simulate the Panini press, get a clean brick, wrap it in heavy duty aluminum foil, and place on top of the sandwiches.  Cover and grill.  You will have to turn the sandwich if you use this method.
